Creamy Pumpkin Soup

Pumpkin, peeled & chopped

NESTLE CARNATION Light & Creamy Evaporated Milk
1 pinch
Nutmeg
Light sour cream to serve
Chives, chopped, to serve

Method

  1. Melt margarine in large saucepan over medium heat; add onion, cook 2 minutes. Add stock and pumpkin; bring to boil, reduce heat, simmer uncovered 25 minutes or until pumpkin is tender.

  2. Place pumpkin and liquid in blender or food processor, process until smooth; return to saucepan.

  3. Add NESTLE CARNATION Light & Creamy Evaporated Milk and nutmeg, reheat, do not boil.

  4. Serve with a dollop of light sour cream and chives, if desired.
