Dory Fish with Aspagus in a Creamy Asian Broth

john or mirror dory (or other white boneless fish) fillets
freshly ground black pepper

mini asparagus
1 tbsp
1 small
leek, sliced (200g)
2 cloves
garlic, chopped
red chilli, finely chopped, optional
2 tsp
finely chopped ginger
2 tsp
finely chopped kaffir lime leaves optional

sliced mushrooms
375 ml
fish stock
1 tbsp
maggi authentic thai fish sauce
375 ml
can NESTLÉ CARNATION Light & Creamy Evaporated Milk
1/2 cup
thinly sliced green (spring) onions


  1. lay fillets onto chopping board skin side up. sprinkle with pepper. divide asparagus evenly between fish. roll firmly, securing with toothpicks. set aside.

  2. heat oil in a large saucepan over medium heat. add leek, garlic, chilli, ginger, leaves and mushrooms. cook 5 minutes or until fragrant and mushrooms are tender. add stock and fish sauce, bring to the boil; simmer 5 minutes.

  3. add NESTLÉ CARNATION light & creamy evaporated milk and fish rolls; simmer 15 minutes or until fish is cooked through. stir through green onions.
