Method

  1. Heat oil in a medium frying pan over medium heat; cook green onion, capsicum and peas for 1 minute or until just soft; add fish, cook 2 minutes.

  2. Blend cornflour with 1 tablespoon of NESTLÉ CARNATION Light & Creamy Evaporated Milk; add to the frying pan with remaining milk and mustard. Bring to the boil, stirring constantly, then simmer for 2 minutes. Remove from heat; stir in cheese.

  3. Divide mixture between 4 individual ovenproof serving dishes. Sprinkle with combined breadcrumbs and extra cheese. Grill until golden.
