Method

  1. Heat oil in medium frying pan over medium heat; add potato and onion, cook 5 minutes or until tender. Stir in sliced ham and parsley. Remove from pan and set aside.

  2. Wipe frying pan clean; heat extra oil in frying pan over medium heat; pour in combined eggs, NESTLÉ CARNATION Light & Creamy Evaporated Milk and extra parsley; cook until just starting to set; turn over, cook until golden.

  3. Top with filling, fold over and serve.
