Light and Creamy Carbonara for One

spray oil for cooking
2 rashers
rindless lean bacon, thinly sliced (50g)
1/2 small
onion, thinly sliced (40g)
2/3 cup
mushrooms, thinly sliced (50g)
1 tsp
1/2 x 375 ml
can NESTLÉ CARNATION Light & Creamy Evaporated Milk
handful baby spinach leaves
1 tbsp
grated parmesan cheese


  1. cook pasta according to directions on packet, drain and set aside. meanwhile, heat a medium frying pan, spray with oil; add bacon and onion, cook 3 minutes, add mushrooms, cook further 1 minute.

  2. blend cornflour with 1 tablespoon of NESTLÉ CARNATION light & creamy evaporated milk; add to pan with remaining creamy evaporated milk, bring to boil stirring, add pasta, remove from heat and stir through baby spinach leaves.

  3. sprinkle with parmesan cheese. serve immediately.
