Method

  1. Cook pasta according to directions on packet, drain and keep warm.

  2. Meanwhile, heat a large frying pan, spray with oil; add chicken and cook for 5 minutes or until browned and cooked through. Add bacon and onion, cook 3 minutes; then add mushrooms and cook a further 1 minute.

  3. Blend cornflour with 1/4 cup (60ml) NESTLÉ CARNATION Light & Creamy Evaporated Milk. Add to frying pan with remaining milk, stirring constantly until the sauce boils and thickens, stirring, add pasta and baby spinach; toss through. Sprinkle with cheese. Serve immediately.
