Light & Creamy Chicken Carbonara

Spray oil for cooking

skinless chicken breasts (400g), sliced thinly

lean shortcut bacon rashers (100g), sliced thinly

medium onion (150g), sliced thinly

sliced mushrooms (140g)
375 ml
NESTLÉ CARNATION Light & Creamy Cooking Milk
2 cups
baby spinach
2 tbsp
grated parmesan cheese

Method

  1. Cook pasta according to directions on packet, drain and keep warm.

  2. Meanwhile, heat a large frying pan, spray with oil; add chicken and cook for 5 minutes or until browned and cooked through. Add bacon and onion, cook 3 minutes; then add mushrooms and cook a further 1 minute.

  3. Add NESTLE CARNATION Lite Cooking Cream to frying pan stirring constantly until the sauce boils and thickens, stirring, add pasta and baby spinach; toss through. Sprinkle with cheese. Serve immediately.
