Pumpkin, Broccoli And Cashew Pasta

spiral pasta

chopped pumpkin (280g)
1 tbsp
oil

onion chopped (80g)
2 cloves
garlic crushed
375 ml
can NESTLÉ CARNATION Light & Creamy Evaporated Milk
1 tbsp
cornflour
2 cups
broccoli florets (160g)
1/2 cup
reduced fat grated cheddar cheese (60g)
1/2 cup
cashews toasted (75g)

Method

  1. Cook pasta according to directions on packet, drain and keep warm.

  2. Place pumpkin in boiling water, simmer 1 minute, drain.

  3. Heat oil in a frying pan over medium heat, add onion, garlic and pumpkin, cook stirring 2 minutes.

  4. Blend 2 tablespoons NESTLÉ CARNATION Light & Creamy evaporated milk and cornflour; add to pan with remaining milk and broccoli, bring to boil, stirring constantly, simmer 1 minute. Add pasta, cook just until heated through; remove from heat, stir in cheese and sprinkle with cashews.
