Method

  1. for the fresh tuna, heat the oil in a large frying pan, sear tuna 2 minutes on all sides, cover loosely with foil, set aside to rest.

  2. heat second measure of oil in clean frying pan, add onion and garlic, cook for 2 minutes or until softened, add zucchini, chilli and zest, cook for further 2 minutes. combine NESTLÉ CARNATION light & creamy evaporated milk and cornflour, add to saucepan, cook for 2 minutes or until thickened slightly.

  3. cook pasta according to packet directions. drain and add to frying pan.

  4. slice tuna, gently mix through pasta with rocket. serve.
